The need for sustainable agriculture has progressively grown in recent years, not only for the respect of nature and the environment but above all for the attention to human health. This is why the practice of organic farming is progressively increasing and the products made from it are getting better every year.
Our Chianti wine D.O.C.G. it is obtained from the processing of grapes from organic farming. The principle on which our agriculture is based is simple; avoid synthetic chemicals both on the ground and on the plants and their fruits. Vinification is carried out using a quantity of sulfur dioxide below half the quantity required by Italian law. No form of pasteurization is used to preserve the organic acids and enzymes that our body uses. Our grapes are harvested by hand and stored in boxes. Then they are pressed, de-stemmed and left to ferment initially (alcoholic fermentation phase) in a natural way in steel at a controlled temperature. Subsequently (malolactic fermentation phase) the product is left to ferment, again naturally following the seasonal cycle, until the classic Chianti wine is obtained. The fermentation is then refined in steel and in bottles.
